The best way to select your foods on a plate, for a good nutritional combination, is to seek out a range of colours. This lunch salad packs a wellbeing punch being full of anti-oxidants (Kale), rich in nutrients (gojis), minerals vit B & E (almonds) and great for lowering cholesterol and anti-cancer fighting properties (cabbage, almonds).
- 10 – 12 Kale Leaves finely chopped
- 2 carrots grated
- 1/8 red cabbage and 1/8 white cabbage
- 2 tbsp of goji berries
- 4 lemon wedges
- Handful of Activated Almonds
Dressing – mix all ingredients together with a folk
- 4tbsp tahini
- Juice of 1 lemon
- 2tbsp olive oil
- 2tbsp of water
- 1tsp spirulina (optional)
Serves 4 – GF, Vegan, Vego
